  • 1 lb large raw shrimp (peeled, deveined & tail-off)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 8 oz coleslaw mix
  • 10 flour tortillas
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • Kosher salt & black pepper to taste
  • Cooking spray
  • ¼ cup chopped cilantro
  • ¼ cup chopped green onion
  • Juice from ½ lime
  • Squirt of sriracha

Instructions

  1. Pat shrimp dry and set up a dredging station with bowls for tapioca flour mixture, panko breadcrumbs, and whisked eggs.
  2. Bread each shrimp by dipping it into the flour mix, then egg wash, then panko.
  3. Place breaded shrimp in the air fryer basket and lightly spray with cooking spray.
  4. Air fry at 390°F for about 7 minutes, flipping halfway through.
  5. Mix mayonnaise, Thai sweet chili sauce, and sriracha to create the bang bang sauce.
  6. Combine coleslaw mix with cilantro, green onion, mayonnaise, lime juice, sriracha, and salt.
  7. Assemble tacos by placing slaw on tortillas followed by crispy shrimp and any remaining sauce.
