Set up a breading station: one bowl with seasoned breadcrumbs, another with beaten eggs mixed with salt and pepper.
Dip each chicken piece into the egg mixture, allowing excess to drip off, then coat with breadcrumbs.
Preheat air fryer to 390°F. Lightly spray basket with olive oil.
Arrange chicken in a single layer in the basket and spray lightly again. Cook for 6-7 minutes, flipping halfway through, until internal temperature reaches 165°F.
Let rest for five minutes before serving with lemon juice and your choice of garnishes.
