  • 2 tablespoons coconut oil
  • 1/4 teaspoon cumin seeds
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1/2 inch ginger (grated)
  • 10 ounces chopped spinach (fresh or frozen)
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • Sea salt (to taste)

Instructions

  1. Boil the chopped potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
  2. In a large saucepan, heat coconut oil over medium-high heat. Add cumin seeds until they sizzle.
  3. Add the chopped onions and sauté for about 3 minutes until softened.
  4. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  5. Mix in ground coriander, cumin, turmeric, and paprika; cook for one minute to release flavors.
  6. Add spinach (thawed if using frozen) and cook until wilted, about 2 minutes.
  7. Season with sea salt, return boiled potatoes to the pan, gently mixing everything together for about 3 minutes on low heat.
