Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then add lemon juice and zest; mix until well combined.
  4. Gently fold in flour and salt until no streaks remain.
  5. Pour batter into the prepared baking dish and spread evenly.
  6. Bake for 30–35 minutes or until golden brown; a toothpick should come out with moist crumbs.
  7. Allow to cool for at least 10 minutes before glazing.
