  • 1/4 cup pitted green olives (halved)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Wash the potatoes and cut larger ones into uniform pieces.
  2. In a large pot, cover potatoes with cold water and add salt; boil until tender (15-20 minutes).
  3. Drain and let cool slightly.
  4. Whisk together dressing ingredients in a bowl.
  5. In a large mixing bowl, combine cooled potatoes, olives, feta, parsley, and dill.
  6. Pour dressing over the salad and toss gently to combine.
