  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 cups buttermilk (or substitute with regular milk mixed with vinegar or lemon juice)
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2/3 cup brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix in buttermilk until smooth.
  5. In a separate bowl, whisk together flour and baking soda; then slowly add to the wet mixture until just combined.
  6. In another bowl, combine brown sugar and cinnamon for the swirl.
  7. Layer half of the batter in each pan, sprinkle half of the cinnamon-sugar mixture over it, then top with remaining batter and finish with the rest of the cinnamon-sugar.
  8. Use a knife to swirl through the batter gently.
  9. Bake for 45-50 minutes or until a toothpick comes out clean.
