  • 3 cloves garlic, minced

  • 1 teaspoon cumin
  • ½ teaspoon black pepper
  • 6 cups low-sodium chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup kale or spinach, chopped
  • Salt to taste
  • Fresh lemon juice (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering. Add chopped onion and sauté until translucent (about 3–4 minutes).
  2. Stir in minced garlic and grated ginger; cook for an additional minute until fragrant.
  3. Add ground turmeric, cumin, and black pepper to the pot; stir well to bloom the spices for about 30 seconds.
  4. Gently add chicken thighs or breasts into the pot along with low-sodium chicken broth; bring to a boil then reduce to a simmer. Cover and cook for approximately 30 minutes.
  5. Remove chicken pieces from the pot and shred them using two forks. Return shredded chicken back into the pot.
  6. Add sliced carrots, chopped celery, and chopped greens; cook for an additional 10–15 minutes until vegetables are tender.
  7. Taste and adjust seasoning with salt as needed before serving. Garnish with fresh cilantro and a squeeze of lemon juice if desired.
