Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 medium Granny Smith apple, thinly sliced
  • 4 oz light Brie cheese, sliced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried thyme
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp creamy Dijon mustard
  • 1 tsp whole grain Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. Stuff each chicken breast with apple slices and Brie cheese, then fold them closed.
  4. Season both sides of the chicken with salt, pepper, and thyme.
  5. In a skillet over medium-high heat, sear each stuffed chicken breast for about 1-2 minutes on each side until golden brown.
  6. Whisk together maple syrup, creamy Dijon mustard, and whole grain Dijon mustard in a bowl to create the glaze.
  7. Place the seared chicken on the prepared baking sheet, brush the glaze over the tops, and bake for 20-25 minutes until fully cooked.
