  • ¼ cup granulated sugar
  • ⅓ cup apple butter (homemade or store bought)
  • 1 egg, at room temperature
  • 2 teaspoons vanilla bean paste (or extract)
  • 2¼ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon fine salt
  • 1 cup granulated sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Instructions

  1. Melt unsalted butter in a saucepan over low heat. In a large bowl, whisk together melted butter, dark brown sugar, and granulated sugar until combined.
  2. Mix in apple butter, egg, and vanilla bean paste until well blended.
  3. In another bowl, combine all-purpose flour, cream of tartar, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat oven to 350°F (175°C). Roll chilled dough into balls and coat in cinnamon-sugar mixture.
  6. Bake on lined baking sheets for 10-12 minutes until golden around the edges yet soft in the center.
