- 1 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples (peeled)
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and apple cider; mix until combined.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Gently fold in the diced apples until evenly distributed.
- Scoop rounded balls of dough onto the prepared baking sheet about two inches apart.
- Bake for 10–12 minutes until edges are golden but centers are soft.
- Allow cookies to cool before glazing them with a mixture of powdered sugar and apple cider.
