  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples (peeled)
  • 1/2 cup powdered sugar (for glaze)
  • 1–2 tbsp apple cider (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider; mix until combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually fold the dry mixture into the wet ingredients until just combined.
  6. Gently fold in the diced apples until evenly distributed.
  7. Scoop rounded balls of dough onto the prepared baking sheet about two inches apart.
  8. Bake for 10–12 minutes until edges are golden but centers are soft.
  9. Allow cookies to cool before glazing them with a mixture of powdered sugar and apple cider.
