  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Optional: Fresh rosemary or thyme sprigs, sliced apples for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry with paper towels and season generously with salt and pepper.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Sear the turkey breast on all sides until golden brown (about 3-4 minutes per side).
  3. Transfer the seared turkey to a roasting pan and pour in 1 cup of apple cider to keep it moist while roasting.
  4. In a saucepan over medium heat, combine the remaining apple cider, brown sugar, apple cider vinegar, Dijon mustard, minced garlic, cinnamon, and optional cloves. Simmer until thickened to a glaze consistency (10-15 minutes).
  5. Brush the glaze over the turkey breast and roast in the oven, basting every 15 minutes until it reaches an internal temperature of 165°F (74°C), about 1.5 to 2 hours.
  6. Allow resting for 10-15 minutes before carving. Garnish with fresh herbs and sliced apples.
