  • 1/3 cup unsweetened plain plant-based yogurt
  • 3 tbsp apple butter
  • 1 medjool date (pitted)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 cup soy milk
  • 1/3 cup chia seeds
  • 2 apples (diced)
  • 3 tbsp gluten-free rolled oats
  • 3 tbsp walnuts or pecans (chopped)

Instructions

  1. In a blender, combine plant-based yogurt, apple butter, one medjool date, vanilla extract, cinnamon, and soy milk. Blend until smooth.
  2. Pour the mixture over chia seeds in a bowl and whisk well. Let sit for 5 minutes, then whisk again to prevent clumping. Refrigerate overnight.
  3. For the crumble topping, pulse rolled oats, chopped walnuts or pecans, and two pitted medjool dates in a mini food processor until crumbly.
  4. In a sauté pan over medium-low heat, cook diced apples with maple syrup and cinnamon for about 3–4 minutes until tender.
  5. To assemble, layer chia pudding in jars with stewed apples and top with crumble before serving.
