  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tsp salt (divided)
  • 4 egg yolks
  • 3 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 2 tsp vanilla bean paste

Instructions

  1. Peel, core, and slice the apples thinly. Toss with 150 g sugar and 1/2 tsp salt.
  2. In a skillet over medium heat, cook apple slices until softened and slightly caramelized.
  3. For the custard, whisk together egg yolks, cornstarch, remaining sugar, and salt. Heat milk until steaming; gradually mix into egg mixture.
  4. Return to low heat and stir until thickened. Add vanilla bean paste.
  5. In a baking dish, layer half of the cooked apples followed by half of the custard; repeat layers.
  6. Chill in the refrigerator for at least one hour before serving.
