  • 1 Tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 Tablespoon corn starch
  • 2 Tablespoons water (or more if needed)
  • 4 cups French bread, cut into small ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Prepare the apple filling by combining chopped apples, light brown sugar, lemon juice, spices, and cornstarch in a saucepan. Cook over medium heat for about 5-10 minutes until apples soften. Set aside to cool.
  2. In a bowl, soak French bread cubes in a mixture of eggs, milk, cream, sugar, vanilla, and spices for 15 minutes.
  3. Mix melted butter with maple syrup and chopped pecans for the topping.
  4. Preheat oven to 350°F (175°C). Assemble by filling muffin pan cavities with soaked bread mixture and pressing down gently.
  5. Top each with cooled apple filling followed by the pecan topping. Bake for 10 minutes, then return to oven for another 12-15 minutes until golden brown.
  6. Serve warm with additional maple syrup or whipped cream.
