  • 2 boneless, skinless chicken breasts
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 4 cups mixed greens (romaine, cabbage, kale)
  • 1 cup shredded red cabbage
  • 1 carrot (julienned)
  • 1/2 cucumber (thinly sliced)
  • 1/4 cup cilantro (chopped)
  • 3 tbsp soy sauce (for dressing)
  • 2 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 clove garlic (minced)

Instructions

  1. Marinate chicken breasts in a mixture of soy sauce, honey, and sesame oil for 15 minutes.
  2. Coat marinated chicken in beaten egg then panko breadcrumbs.
  3. Cook chicken in an air fryer at 375°F for about 12–15 minutes or pan-fry until golden brown.
  4. In a large bowl, combine mixed greens, red cabbage, carrot, cucumber, cilantro, and green onions.
  5. Whisk together soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic for the dressing.
  6. Toss salad with dressing just before serving and top with cooked chicken.
