Ingredients

Scale
  • 3 pounds boneless chicken thighs
  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • Cooked white rice for serving

Instructions

  1. Prepare your vegetables by finely chopping the onion, bell peppers, celery, and parsley; mince the garlic.
  2. Sear the chicken thighs in a skillet over medium-high heat with avocado oil for about 3-5 minutes on each side until browned.
  3. In the same skillet, melt butter over medium heat to make a roux by whisking in flour until it reaches a medium brown color (10-15 minutes).
  4. Add chopped vegetables to the roux and sauté for about 10 minutes; stir in minced garlic and cook for an additional minute.
  5. Gradually whisk in warmed chicken broth until smooth, then add seared chicken thighs back into the pot. Simmer on low heat for about 30 minutes.
  6. Chop the cooked chicken into bite-sized pieces, return to sauce, sprinkle with parsley, adjust seasoning as needed.
  7. Serve over cooked white rice and garnish with green onions.
