  • 1 tbsp virgin coconut oil
  • 4 tbsp yellow curry paste
  • 2 15-ounce cans of coconut milk
  • 1 or 2 cups chicken stock
  • 4 carrots, peeled and sliced into 1/8" rounds
  • 4 medium-size potatoes, peeled and cut into bite-size pieces
  • 1 yellow onion, sliced into wedges then halved
  • 2 chicken breasts, very thinly sliced
  • 1.5 tsp fish sauce
  • 3/4 tsp salt
  • 1.5 tsp sugar
  • Cilantro, for garnish
  • Lime wedges, for garnish
  • Serve with jasmine rice

Instructions

  1. Heat coconut oil in a large pot over medium-high heat until shimmering. Stir in yellow curry paste and sauté for about 2 minutes until fragrant.
  2. Add the solid cream layer from the top of the coconut milk can along with the remaining coconut milk and chicken stock. Bring to a gentle simmer.
  3. Stir in diced potatoes and cook halfway through before adding carrots and onion wedges. Cook until tender.
  4. Add thinly sliced chicken to the pot and simmer until cooked through.
  5. Season with fish sauce, salt, and sugar to taste; adjust flavors as needed.
  6. Serve over jasmine rice, garnished with fresh cilantro and lime wedges.
