  • 3 cups butternut squash (peeled, seeded, cubed)
  • 12 oz Brussels sprouts
  • 8 oz bow tie pasta
  • 12 oz cooked chicken sausage
  • 5 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)
  • 1/4 teaspoon smoked paprika (to taste)
  • Fresh thyme (to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet; roast for 20 minutes.
  2. Prepare Brussels sprouts by trimming and halving; coat with olive oil, salt, and pepper. Add to baking sheet after squash has roasted for 20 minutes.
  3. Boil salted water in a large pot; cook bow tie pasta until al dente. Reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced chicken sausage in olive oil until browned. Add minced garlic for an additional minute.
  5. Combine roasted veggies and cooked pasta with sausage in the skillet; stir in butter, seasonings, and reserved pasta water as needed.
  6. Serve warm on plates or bowls.
