  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Olive oil
  • Salt and pepper
  • ¼ teaspoon smoked paprika
  • Fresh thyme

Instructions

  1. Preheat oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper; roast on a baking sheet for 15-20 minutes until caramelized.
  2. In another baking sheet, toss halved Brussels sprouts with olive oil, salt, and pepper; roast alongside the squash for 20-30 minutes until golden.
  3. Boil salted water in a large pot and cook bow tie pasta until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced sausage in olive oil; set aside.
  5. In the same skillet, sauté minced garlic until fragrant, then melt in butter. Add cooked pasta along with salt, pepper, and smoked paprika.
  6. Combine roasted squash, Brussels sprouts, and sausage into the pasta mixture; stir in fresh thyme.
