  • 1 cup shelled edamame (optional)
  • 1 cup diced strawberries
  • 1 medium avocado (diced)
  • 3 tablespoons finely diced red onion
  • 1 medium jalapeño (seeded and diced)
  • 1/4 cup basil leaves (chiffonade)
  • 3 tablespoons chopped cilantro
  • 1 tablespoon sesame oil
  • Zest of 1 lime
  • 1/4 cup lime juice (about 1 lime)
  • 1 teaspoon maple syrup
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. In a large bowl, combine diced mangoes, optional edamame, strawberries, avocado, red onion, jalapeño, basil, and cilantro.
  2. In a small bowl, whisk together sesame oil, lime zest and juice, maple syrup, and salt.
