  • 1 cup cherry tomatoes (halved)
  • ½ small red onion (thinly sliced)
  • 3 green onions (thinly sliced)
  • 3 Tbsp avocado oil
  • 2 Tbsp lime juice or lemon juice
  • 1 Tbsp rice vinegar
  • 2 tsp pure maple syrup
  • 1 small clove garlic (chopped)
  • ¼ cup fresh cilantro (chopped)
  • 1 tsp fresh oregano (chopped)
  • Sea salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together avocado oil, lime or lemon juice, rice vinegar, maple syrup, garlic, oregano, sea salt, and black pepper until emulsified.
  2. In a large mixing bowl, combine diced avocados, chopped cucumber, halved cherry tomatoes, sliced red onion, and green onions.
