- 1 lb large shrimp (peeled and deveined)
- 2 ripe avocados (diced)
- 1 head butter lettuce (or Romaine/Iceberg)
- 1/4 cup red onion (finely diced)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup fresh cilantro (chopped)
- 2 tbsp fresh lime juice
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- Salt and freshly ground black pepper
- Optional: red pepper flakes, sesame seeds, Sriracha mayo for garnish
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add shrimp seasoned with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes until fully cooked.
- In a bowl, combine diced avocados, red onion, cherry tomatoes, cilantro, lime juice, salt, and optional red pepper flakes; mix gently.
- Lay butter lettuce leaves on plates. Fill each leaf with the avocado-shrimp mixture.
- Garnish with sesame seeds or Sriracha mayo if desired. Serve immediately.
