  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1 head butter lettuce (or Romaine/Iceberg)
  • 1/4 cup red onion (finely diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • Salt and freshly ground black pepper
  • Optional: red pepper flakes, sesame seeds, Sriracha mayo for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Add shrimp seasoned with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes until fully cooked.
  3. In a bowl, combine diced avocados, red onion, cherry tomatoes, cilantro, lime juice, salt, and optional red pepper flakes; mix gently.
  4. Lay butter lettuce leaves on plates. Fill each leaf with the avocado-shrimp mixture.
  5. Garnish with sesame seeds or Sriracha mayo if desired. Serve immediately.
