  • 1 medium head cauliflower
  • ½ cup flour
  • ¼ cup cornstarch
  • ¾ cup milk
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1¼ cup panko breadcrumbs
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • ¼ cup sriracha
  • 1 tsp rice vinegar (optional)

Instructions

  1. Preheat your oven to 200℃ (400℉) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, baking powder, paprika, salt, and black pepper. Gradually add milk until combined smoothly.
  3. Toss cauliflower florets in the batter until fully coated. Sprinkle with panko breadcrumbs and toss again.
  4. Spread the coated florets on the prepared baking sheet and bake for 20-22 minutes or until golden brown.
  5. While baking, mix mayonnaise, sweet chili sauce, sriracha, and rice vinegar (if using) in a bowl to create the bang bang sauce.
  6. Once baked, gently toss cauliflower in the sauce before serving.
