  • 1 teaspoon cumin seed

  • Chili flakes (to taste)
  • 2 bell peppers (sliced (red, orange, or yellow))
  • ½1 Fresno pepper (seeded and sliced)
  • 1 shallot (sliced)
  • 2 cloves garlic (chopped)
  • 4 ounces feta cheese block (patted dry)
  • 2 tablespoons cornstarch
  • ⅙ cup about 2.5 tablespoons extra virgin olive oil (for vinaigrette)
  • 1 tablespoon lemon juice
  • ½ tablespoon sparkling grape juice vinegar
  • 1 teaspoon honey
  • Rice for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, cumin seed, ground ginger, salt, black pepper, and chili flakes.
  3. Coat chicken tenders in the spice mixture.
  4. Spread sliced bell peppers, Fresno pepper, shallots, and garlic on a baking sheet; drizzle with olive oil and season with salt.
  5. Place seasoned chicken on top of the vegetables.
  6. Cut feta into small cubes; coat with cornstarch and sprinkle over the chicken and vegetables.
  7. Bake for 25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Whisk together vinaigrette ingredients: olive oil, lemon juice, vinegar, and honey.
  9. Serve chicken over rice or pasta drizzled with vinaigrette.
