  • 1½ teaspoons baking powder
  • ½ teaspoon salt

  • 1 cup fresh blueberries
  • 2 cups powdered sugar
  • 78 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat oven to 425°F (220°C) and grease two donut pans.
  2. In a large bowl, whisk together granulated sugar and melted butter until smooth.
  3. Add buttermilk, eggs, vanilla extract, and lemon zest; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and baking soda.
  5. Gradually fold dry ingredients into the wet mixture until just combined; do not overmix.
  6. Gently fold in fresh blueberries.
  7. Pipe batter into greased donut pans until nearly level.
  8. Bake for 7-8 minutes or until a toothpick inserted comes out clean.
  9. Allow cooling in pans for 10 minutes before transferring to wire racks.
  10. For the glaze, combine powdered sugar with freshly squeezed lemon juice; dip each cooled donut in glaze.
