  • 1 lb. small gold potatoes, cut into bite-sized pieces
  • Olive oil, garlic powder, salt, and pepper
  • 23 cups of broccoli florets
  • 12 lbs. salmon, cut into 24 filets
  • 68 tablespoons butter
  • 12 cloves garlic, minced
  • 1 shallot, minced
  • 23 sprigs of fresh thyme
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley or basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss potato pieces with olive oil, garlic powder, salt, and pepper. Spread evenly on the baking sheet and roast for 25 minutes.
  3. Meanwhile, melt butter in a saucepan over medium-low heat. Sauté minced garlic and shallots until soft, then add chicken broth and cream. Simmer until thickened, then stir in lemon juice and herbs.
  4. After 25 minutes, add salmon filets and broccoli to the baking sheet, seasoning them with olive oil, salt, and pepper. Bake for an additional 10–15 minutes until the salmon is cooked through.
  5. Serve the salmon with roasted potatoes and broccoli, drizzling generously with lemon sauce.
