  • 4 boneless, skinless chicken breasts
  • 4 garlic cloves, minced
  • 1/2 cup basil pesto
  • 2 ripe tomatoes, sliced
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tablespoons fresh basil, chopped
  • Salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the chicken breasts in a casserole pan and season generously with salt.
  3. Evenly distribute the minced garlic over the chicken.
  4. Spread approximately two tablespoons of basil pesto on each breast.
  5. Layer the sliced tomatoes on top of the pesto-covered chicken.
  6. Place mozzarella slices over the tomatoes.
  7. Bake for 20-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden.
  8. Let rest for five minutes before serving; garnish with freshly chopped basil.
