  • 2 medium sweet potatoes (about 1 pound), peeled and diced
  • 1 pound beef sirloin or flank steak, cut into thin strips
  • 1 ripe avocado, diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • ½ red onion, diced
  • 1 cup bell peppers (any colors), diced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • salt & black pepper to taste
  • Juice from 1 lime

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil and spices in a large bowl. Spread on a baking sheet in a single layer.
  2. Roast sweet potatoes for about 20-25 minutes until tender and caramelized.
  3. Meanwhile, heat a skillet over medium-high heat. Add seasoned beef strips and cook for about 3-5 minutes until browned and cooked through.
  4. In the same skillet, sauté diced red onion and bell peppers for about 5-7 minutes until softened.
  5. Assemble your power bowls by layering roasted sweet potatoes, cooked beef, black beans, corn, sautéed veggies, diced avocado, and fresh lime juice.
