- 2 medium sweet potatoes (about 1 pound), peeled and diced
- 1 pound beef sirloin or flank steak, cut into thin strips
- 1 ripe avocado, diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- ½ red onion, diced
- 1 cup bell peppers (any colors), diced
- 2 tablespoons extra virgin olive oil
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- salt & black pepper to taste
- Juice from 1 lime
- Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil and spices in a large bowl. Spread on a baking sheet in a single layer.
- Roast sweet potatoes for about 20-25 minutes until tender and caramelized.
- Meanwhile, heat a skillet over medium-high heat. Add seasoned beef strips and cook for about 3-5 minutes until browned and cooked through.
- In the same skillet, sauté diced red onion and bell peppers for about 5-7 minutes until softened.
- Assemble your power bowls by layering roasted sweet potatoes, cooked beef, black beans, corn, sautéed veggies, diced avocado, and fresh lime juice.
