  • 2 lbs beef chuck or stew meat (cubed)
  • 2 tbsp olive oil
  • 1 large onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 can crushed tomatoes (14 oz)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 tsp ground allspice
  • Salt and pepper to taste
  • 1 ½ cups orzo pasta
  • Grated cheese for serving
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions until translucent, then add minced garlic and cook until fragrant.
  3. Return the beef to the pot and mix in crushed tomatoes, tomato paste, beef broth, cinnamon stick, bay leaves, allspice, salt, and pepper.
  4. Simmer gently on low heat for about 2 hours.
  5. Add orzo pasta along with hot water or additional broth as needed; cook uncovered for an additional 15-20 minutes until al dente.
  6. Remove from heat, discard cinnamon stick and bay leaves. Serve topped with grated cheese and fresh parsley.
