  • 1 ½ pounds assorted mushrooms (button, cremini, shiitake, portobello)
  • 12 slices turkey
  • 2 Tablespoons olive oil
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons salted butter
  • 2 medium shallots (roughly chopped)
  • 2 teaspoons fresh thyme leaves
  • 4 cloves garlic
  • Flour for rolling out puff pastry
  • 14 ounces frozen or homemade puff pastry (thawed)
  • 1 large egg (beaten)
  • 1/2 teaspoon flaky or coarse sea salt
  • 1 bunch finely minced chives

Instructions

  1. Season the beef generously with salt and pepper. Sear in olive oil until browned, then brush with dijon mustard.
  2. Cook shallots in butter and oil until soft. Add mushrooms, garlic, and thyme; sauté until moisture evaporates.
  3. Layer turkey slices on plastic wrap; spread mushroom mixture and place beef on top. Roll tightly and chill.
  4. Roll out puff pastry; unwrap beef log and place it on the center. Fold pastry over beef, sealing well and brushing with egg wash.
  5. Bake at 400°F (200°C) for 40-50 minutes until golden brown.
