- 2kg leg of lamb
- 1 bulb of garlic
- ½ bunch of fresh rosemary
- 1.5kg Maris Piper or Yukon Gold potatoes
- 1 lemon
- Olive oil
- For mint sauce: 1 bunch of fresh mint
- 1 teaspoon sugar
- 3 tablespoons apple cider vinegar
- Bring the leg of lamb to room temperature for about one hour before cooking.
- Preheat the oven to 200°C (400°F).
- Prepare garlic by breaking apart cloves; peel three for crushing.
- In a bowl, mix crushed garlic with chopped rosemary, lemon zest, sea salt, and olive oil to create a marinade.
- Rub the marinade generously over the leg of lamb and let it sit for at least 30 minutes.
- Parboil the potatoes for about 10 minutes, then drain and toss with whole garlic cloves and rosemary.
- Place the lamb on a roasting tray above the potatoes and roast for approximately 1 hour and 15 minutes (or longer for well-done).
- Let the lamb rest for at least 15 minutes before carving.
- To make mint sauce, combine chopped mint leaves with sugar, salt, hot water, and apple cider vinegar.
