  • 2 pints cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 tablespoon granulated sugar
  • 1 minced garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups cooked farro
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pine nuts
  • 1/4 cup mixed fresh herbs (parsley, chives, oregano)
  • Salt and pepper for seasoning
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sparkling grape juice vinegar
  • 1 1/2 tablespoons honey
  • 2 garlic cloves, finely minced or crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup extra virgin olive oil

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet, toss halved cherry tomatoes with olive oil, sugar, minced garlic, salt, pepper, and thyme. Roast for 30-40 minutes until caramelized.
  2. Cook farro according to package instructions and let cool slightly.
  3. In a bowl, whisk together lemon juice, sparkling grape juice vinegar, honey, minced garlic, salt, pepper, and extra virgin olive oil.
  4. In a large bowl, combine roasted tomatoes, cooked farro, crumbled feta cheese, pine nuts, and mixed herbs. Pour dressing over and toss gently.
  5. Let sit for 10 minutes before serving.
