  • 3 lbs beef chuck roast
  • 6 dried guajillo chiles
  • 4 dried ancho chiles
  • 1 large white onion
  • 6 garlic cloves
  • 16 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded Oaxaca cheese or Monterey Jack cheese

Instructions

  1. Prepare the chiles by removing stems and seeds, toasting them in a skillet until fragrant, then soaking in hot water until softened.
  2. Blend soaked chiles with garlic, onion, spices, and beef broth until smooth.
  3. Sear seasoned beef in a Dutch oven, add the blended sauce and bay leaves, then simmer on low for 2.5 to 3 hours until tender.
  4. Shred the cooked beef and strain the broth for later use.
  5. Warm corn tortillas on a skillet.
  6. Fill each tortilla with shredded beef, roll snugly, and place seam-side down in a baking dish.
  7. Pour enchilada sauce over rolled tortillas and sprinkle with cheese.
  8. Bake at 375°F (190°C) for about 15–20 minutes until bubbly and golden.
