5 egg whites
1 1/4 cup granulated sugar
2 tbsp cornstarch
2 tsp lemon juice
2 cups blackberries
1/4 cup sugar (or sweetener of choice)
2 tbsp lemon juice
1 tbsp cornstarch
2 tbsp water
1 1/2 cups cold heavy cream
1/4 cup powdered sugar
1 tsp vanilla
Instructions
Preheat oven to 250°F (120°C). Beat egg whites in a clean bowl until soft peaks form. Gradually add granulated sugar, continuing to whip until stiff peaks form.
Fold in cornstarch and lemon juice gently. Spoon meringue onto a lined baking sheet, creating wells for the filling.
Bake for about 60 minutes, then turn off the oven and let meringues cool inside.
For the blackberry filling, cook blackberries with sugar, lemon juice, cornstarch, and water in a saucepan until thickened. Let cool.
Whip heavy cream with powdered sugar until soft peaks form.
Assemble by filling meringues with blackberry mixture and topping with whipped cream.
