  • 1 cup pineapple (diced)
  • 1 cup tomato (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tablespoons jalapeño pepper (minced)
  • 1/4 cup fresh cilantro (chopped)
  • 8 6-inch corn tortillas

Instructions

  1. Marinate the chicken: Combine spices with honey, lime zest and juice, and olive oil in a resealable bag with chicken. Let marinate for 20 minutes.
  2. Prepare the salsa: Mix diced pineapple, tomato, red onion, jalapeño pepper, lime zest and juice, and cilantro in a bowl.
  3. Cook the chicken: Heat a skillet over medium-high heat; cook marinated chicken until blackened on both sides (about 10 minutes total).
  4. Rest and warm tortillas: Let chicken rest for 5 minutes before slicing; warm corn tortillas in another pan.
  5. Assemble tacos: Fill tortillas with sliced chicken and top with pineapple salsa.
