  • 3 large sweet potatoes
  • ½ cup turkey bacon (cooked and crumbled)
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • Scallion (minced) for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Prick the sweet potatoes several times with a fork and coat lightly with canola oil and salt. Place them on a baking sheet.
  2. Roast the sweet potatoes in the oven for 60-90 minutes until fork-tender. Allow to cool slightly before handling.
  3. Slice each potato in half lengthwise and scoop out some flesh into a mixing bowl, leaving enough to maintain structure.
  4. Mix the scooped sweet potato flesh with turkey bacon, unsalted butter, shredded cheddar cheese, salt, and black pepper until well combined.
  5. Fill each potato skin with the mixture and create a well in the center for an egg. Crack an egg into each well.
  6. Bake for an additional 15-20 minutes until the egg whites are set but yolks remain soft (if desired).
  7. Garnish with minced scallion before serving.
