  • 2 heads broccoli (approximately 1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup cooked chicken (diced)
  • 1/3 cup chopped red onion
  • 1 cup cheddar cheese (shredded)
  • 1 & 1/4 cups mayonnaise
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Chop the broccoli into small florets.
  2. In a large bowl, combine the dressing ingredients: mayonnaise, lemon zest, lemon juice, white grape juice vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper.
  3. Add the chopped broccoli, dried cranberries, sunflower seeds, diced chicken, shredded cheddar cheese, and chopped red onion to the dressing. Toss gently until well mixed.
  4. Chill in the refrigerator for at least 20 minutes before serving to enhance flavors.
