  • 3/4 cup (150 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup (125 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups (345 g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226 g) unsalted butter, cold and cubed
  • 3/4 cup (150 g) light brown sugar, packed
  • 2/3 cup (130 g) granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In your stand mixer, combine the unsalted butter and light brown sugar. Mix for about three minutes until fluffy.
  3. Add in one large egg and one teaspoon of vanilla extract. Mix until well combined.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture.
  5. Gently stir in the semi-sweet chocolate chips with a spatula.
  6. For the chocolate chip cookie dough, cream cold butter with both sugars until pale and fluffy.
  7. Add an egg plus an egg yolk one at a time while mixing well.
  8. Stir in two teaspoons of vanilla extract.
  9. Whisk together flour, cornstarch, baking soda, and salt separately before adding to the butter mixture.
  10. Fold in chocolate chips.
  11. Scoop out both doughs into balls, press them together slightly, and place them on the baking sheet.
  12. Bake for 8-9 minutes until edges are set but tops look slightly underbaked.
  13. Allow to cool before enjoying.
