  • ½ cup unsalted butter
  • 1 tablespoon espresso powder
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1¼ cups all-purpose flour
  • ½ cup Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, melt the unsalted butter over medium heat until it turns golden brown and develops a nutty aroma. Allow it to cool slightly.
  3. In a mixing bowl, combine the browned butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg and vanilla extract; mix well.
  5. In another bowl, whisk together flour, baking powder, baking soda, espresso powder, and salt. Gradually add this to the wet mixture until just combined.
  6. Fold in the Heath toffee bits gently.
  7. Chill the dough in the refrigerator for at least 2 hours.
  8. Scoop dough onto prepared baking sheets about two inches apart and sprinkle lightly with flaked sea salt.
  9. Bake for 11-13 minutes or until edges are golden brown but centers remain soft. Allow to cool on wire racks.
