Ingredients

Scale
  • 1 cup cold unsalted butter
  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup cold water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Prepare the Crust: In a saucepan, melt cold unsalted butter over medium heat until golden brown and fragrant. Let cool slightly before mixing with flour and salt in a large bowl.
  2. Form the Dough: Combine cooled brown butter with flour and salt until crumbly. Add chilled water and vinegar to bind the mixture. Form into two discs, wrap in plastic, and refrigerate for at least one hour.
  3. Prepare the Filling: Wash and slice peaches and strawberries. Toss them with sugar, cornstarch, lemon juice, and salt; let sit to meld flavors.
  4. Assemble the Pie: Roll out one disc of dough into your pie dish, fill with fruit mixture, then roll out the second disc for the top crust—vent it as desired.
  5. Bake: Preheat your oven to 375°F (190°C) and bake for about 70 minutes until golden brown.
