  • 1 cup brown sugar (for filling)
  • 1 tablespoon cinnamon
  • 1/4 cup milk (for filling)
  • 1 cup powdered sugar (for icing)
  • 1–2 tablespoons milk (for icing consistency)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time and mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into wet ingredients until combined.
  5. Roll out dough to about a ¼-inch thickness; cut into rectangles measuring approximately 3 by 4 inches.
  6. For the filling, combine brown sugar and cinnamon in a bowl. Place filling in the center of half of the cookie rectangles; top with remaining rectangles and seal edges using a fork.
  7. Bake for about 12–15 minutes or until lightly golden.
  8. Cool on wire racks before icing with a mixture of powdered sugar and milk.
