  • 1 lb Brussels sprouts
  • 1 large bunch kale
  • 1 Granny Smith apple
  • 4 tablespoons extra virgin olive oil
  • ⅓ cup pecans (toasted and chopped)
  • ¼ cup dried cranberries
  • 6 ounces sharp cheddar cheese (diced)
  • 1 small shallot (minced)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey

Instructions

  1. Clean and thinly slice the Brussels sprouts; place in a large bowl.
  2. Remove tough stems from kale leaves, slice into ribbons, and add to the bowl.
