  • 1 lb sirloin or ribeye steak
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh rosemary (chopped)
  • 2 sprigs fresh thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into roughly equal-sized chunks.
  3. Toss the cubed squash in olive oil, salt, and pepper before spreading them on a baking sheet.
  4. Roast in the preheated oven for about 25–30 minutes until golden brown and tender.
  5. While roasting, season the steak with salt, pepper, rosemary, and thyme. Let it come to room temperature.
  6. Heat a skillet over medium-high heat with a splash of olive oil. Sear the steak for about 4-5 minutes on each side until it reaches your desired doneness.
  7. Let the steak rest for 5-10 minutes before slicing it thinly against the grain.
  8. Assemble your bowls by layering roasted butternut squash and sliced steak. Finish with minced garlic and optional lemon juice or balsamic glaze.
