  • 1 lb. chicken breasts (butterfly into four thin cutlets)
  • ½ cup 0% Greek yogurt
  • ¼ cup mayonnaise
  • 1.5 teaspoons Dijon mustard
  • ¼ cup parmesan cheese (grated)
  • 2 teaspoons capers (drained)
  • 2 cloves garlic (minced)
  • 1 teaspoon anchovy paste
  • 1.52 tablespoons lemon juice (fresh squeezed)
  • Pinch kosher salt
  • Few turns cracked black pepper
  • 810 ounces romaine lettuce (roughly chopped)
  • 2 hard boiled eggs (grated)
  • 1 large egg
  • 1 tablespoon 2% milk
  • ¼ cup cornstarch
  • â…“ cup panko breadcrumbs
  • â…“ cup Italian breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 lemon (cut into wedges)

Instructions

  1. Prepare the dressing by mixing Greek yogurt, mayonnaise, Dijon mustard, grated parmesan, capers, minced garlic, anchovy paste, lemon juice, salt, and pepper in a bowl.
  2. In another bowl, combine chopped romaine lettuce and grated hard-boiled eggs; drizzle with dressing and mix gently.
  3. Season chicken cutlets with salt and pepper. Set up three bowls: one with beaten egg and milk; one with cornstarch mixed with salt and pepper; one with panko breadcrumbs, Italian breadcrumbs, and parmesan cheese.
  4. Dredge each cutlet in cornstarch, dip in the egg mixture, then coat with the breadcrumb mixture.
  5. Cook the cutlets until golden brown in an air fryer at 375°F (190°C) for about 15 minutes total.
  6. Serve alongside the salad mix and lemon wedges for added flavor.
