  • 2 large boneless, skinless chicken breasts
  • 1012 oz penne or rigatoni pasta
  • 4 garlic cloves, minced
  • 1 ½ cups heavy cream
  • ¾ cup freshly grated parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • ½ tsp smoked paprika
  • Salt & black pepper, to taste
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley, chopped
  • Extra parmesan cheese

Instructions

  1. Pat chicken dry and coat with Cajun seasoning.
  2. Heat olive oil and butter in a skillet over medium-high heat; sear chicken for 4–5 minutes per side until cooked through. Remove and let rest before slicing.
  3. Cook pasta in salted water; reserve half a cup of pasta water before draining.
  4. In the same skillet, sauté garlic in more butter until fragrant, then whisk in flour and add heavy cream slowly. Stir in smoked paprika, salt, pepper, and red pepper flakes; simmer until thickened.
  5. Stir in parmesan cheese until melted, then toss pasta with sauce and reserved water as needed.
  6. Serve topped with sliced chicken and garnish with parsley.
