  • 1/4 cup mascarpone cheese
  • 1/2 tsp vanilla extract
  • 1/3 cup powdered sugar
  • 1/3 cup mini chocolate chips
  • 1 premade pie crust

Instructions

  1. Preheat your oven to 400°F. Roll out the pie crust on a floured surface and cut out 12 rounds using a biscuit cutter. Place each round into an ungreased mini muffin tin.
  2. Bake for 10-12 minutes until golden brown. Cool completely before filling.
  3. In a bowl, mix ricotta, mascarpone, powdered sugar, vanilla extract, and mini chocolate chips until combined.
  4. Spoon or pipe the filling into each cooled pie shell. Top with additional chocolate chips and dust with powdered sugar if desired.
