- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 2 tablespoons basil pesto
- 5 cloves garlic, minced
- 1 cup sour cream
- 1/2 cup fresh chopped basil
- 8 ounces low-moisture mozzarella cheese, cut into chunks
- 8 ounces shredded provolone cheese
- 1/4 cup freshly grated parmesan cheese
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes with olive oil, pesto, garlic, salt, and pepper. Bake for 15 minutes until bursting.
- Meanwhile, mix sour cream and fresh basil in a bowl. Add mozzarella, provolone, and parmesan.
- Fold the cheese mixture into the roasted tomatoes. Top with halved cherry tomatoes.
- Return to oven for another 20 minutes until bubbly and golden brown.
