  • 4 boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 medium Roma tomatoes
  • 1 cup fresh basil leaves
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Marinate the chicken: Whisk together olive oil, balsamic vinegar, Dijon mustard, Italian seasoning, minced garlic, salt, and pepper in a small bowl. Coat the chicken breasts in the marinade and refrigerate for at least 1 hour.
  2. Preheat the oven to 400°F.
  3. Prepare the chicken: Make four deep cuts across each chicken breast without cutting all the way through.
  4. Stuff the chicken: Fill each cut with slices of mozzarella cheese, tomato, and basil.
  5. Bake: Place stuffed chicken on a baking sheet and bake for 25-30 minutes until cooked through (165°F internally).
  6. Rest & serve: Let rest for 5 minutes before serving. Drizzle with balsamic glaze if desired.
