  • 500g boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 cup jasmine rice
  • 2 cups water for rice
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Instructions

  1. Cut the chicken thighs into bite-sized pieces and season lightly with salt and pepper.
  2. In a bowl, mix soy sauce, sesame oil, garlic, ginger, and brown sugar. Marinate the chicken for about 10 minutes.
  3. Rinse jasmine rice under cold water. In a saucepan, bring water to boil, add rice and simmer covered for about 15 minutes until cooked.
  4. Heat oil in a pot over medium-high heat. Sauté marinated chicken until caramelized (about 5-7 minutes).
  5. Pour in chicken broth and rice vinegar; bring to a boil then reduce heat to simmer.
  6. Stir in cornstarch mixture to thicken the broth; simmer for an additional 5 minutes.
  7. Adjust seasoning as needed before serving hot over jasmine rice.
