  • 1 cup pecan chips (plus extra for topping)
  • 1 container cream cheese frosting
  • 1 bag Ghirardelli white chocolate melting wafers

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by lightly spraying it with non-stick cooking spray.
  2. In a large mixing bowl or standing mixer, combine sugar, canola oil, and eggs until fluffy.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet mixture until fully combined.
  5. Gently fold in shredded carrots and pecan chips.
